HOLLOW LEG cocktail classes are for curious folks who are interested in the art + science behind mixology, but aren’t interested in the pretension that they’re normally served with (read: we aren’t the kind of mixologists donning ironic facial hair or leather aprons). 

Our classes are real life test kitchens where class-goers make customized cocktails tailored to their palate, while we peel back the curtain as to how they’re made. During our classes, you’ll be guided on how to make cocktails with handcrafted bitters/tinctures (we make them ourselves!), and use local, seasonal ingredients we source from local farmers.

Make something truly terrible in class? We love a bad cocktail, as we can use science to correct something gone awry (that’s why we’ve been called The Cocktail Whisperers).

Devin Kidner - Hollow Leg

Hey, y’all! My name’s Devin and it’s my honour and pleasure to present to you HOLLOW LEG!

In 2014 I won a national cocktail competition through Slow Food USA, earning me a position as a delegate to Slow Food International’s biannual Terra Madre conference, considered the Olympics of Food. 

In addition to being the moderator of the American Speakeasy workshop at Terra Madre 2014 in Turin, Italy, I’ve taken courses from some of the best mixologists in the world at Sala Mixology in Italy on topics of dilution and temperature, Mezcal and Tequila, botanicals, and molecular mixology. I’ve also achieved my WSET (Wine and Spirit Education Trust) Level 2 Award in Spirits, with distinction, and working on Level 3!

I’ve taught mixology classes at Rhine Hall Distillery and Koval Distillery, and even served on the board of Slow Food Chicago, a non-profit that seeks to create dramatic and lasting change in the local food system to ensure equity, sustainability and pleasure in the food we eat.

In addition to media appearances and promotional videos (Talks at Google, Jack Daniels, CB2, Chicago Tribune, Chicago Reader, and WGN-TV's SEE Chicago, which named HOLLOW LEG a "hidden gem of Chicago,") I have the pleasure of consulting at institutions worldwide, and truly love doing what I do!
