Girl Scout Cookie Cocktails: Thin Mint Cocktail

For the Girl Scout’s most popular cookie, the Thin Mint, this cocktail needed to be special.

A milkshake cocktail simply would not do. So I turned to an old classic to make something truly special!


What is a grasshopper?


A Grasshopper is a cream-based cocktail that uses crème de menthe and crème de cacao. Ours will be a twist on this, omitting the crème de menthe to decrease the sugar content and punching up the mint with peppermint extract.

Silky, minty, and chocolate-y, this cocktail is a perfect alternative to a Thin Mint, or a great pairing with one (because why not have both?).


Prep the Martini Glasses


Remember Magic Shell from your childhood days? The magical chocolate sauce that would harden on top of ice cream? You’re going to make a small batch to line the inside of your martini glasses, giving them a chocolate aroma (and of course, to make it look cool!

  • 1.5 oz (or 43 grams) semi-sweet chocolate chips

  • 1 Tbsp (or 15 grams) coconut oil (measured when solid)

Place these ingredients into a microwave safe bowl and microwave in increments of 20 seconds, stirring intermittently until smooth.

Using a clean paintbrush, paint the inside of your martini glasses with the warm magic shell, then place in the freezer to harden.

Ingredients:

  • 1 oz. vodka

  • 1 oz. crème de cacao (I used white chocolate liqueur to punch up the colour. You’ll get the rich dark chocolate from the chocolate shell and Chocolate Bitters you’ll layer on top of the cocktail!)

  • 2 oz. cream

  • 1 drops Peppermint Extract (you can add more drops to taste - but add them one by one!)

  • 1 drop of green food dye

Garnishes:

  • Homemade Magic Chocolate Shell (for lining your martini glasses)

  • Cocoa Powder + HOLLOW LEG Chocolate Bitters


Shake the first five ingredients into a shaker with ice for 12 vigorous seconds.

Strain the cocktail into the magic shell-lined martini glass. Garnish with HL Chocolate Bitters and a dust of cocoa powder. Serve immediately!
