Creamy Vegan Persimmon Digestif
Craving a bitter, creamy drink perfect for a digestif? Look no further than this mini-cocktail meant to be sipped. Featuring our friends Apologue Liqueurs’ Persimmon Liqueur, and is aromatic with agave.
This cocktail will start out with a bit of prep:
8 oz Blanco tequila
1 Earl Grey tea bag
Combine these ingredients and let steep for 8 hours or overnight. The results will be a tequila with a distinct bergamot nose and a tea flavour!
Ingredients:
2 oz tea/tequila mixture (see above)
1/4 oz lemon juice
1/2 oz 100% cranberry juice
2 oz fine ice
dollop of aquafaba (the recipe can be found here!)
Blend or shake together the first 5 ingredients until the ice is broken down and the cocktail is smooth. Strain into a cup*. Add a dollop of aquafaba, fold it in, then add more on top. Garnish with a single blueberry!
Sip away!
*You can serve it in tiny tea/espresso cups and pretend you’re somewhere fancy during quarantine!
